Grandma Bossy's Zucchini Loaf

  • 1 cup sugar
  • ¼ cup vegetable oil
  • 1 egg
  • 1 cup flour
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp nutmeg
  • ¼ tsp baking powder
  • 1 cup shredded zucchini
  • ½ cup chopped walnuts (optional)


  1. Cream together the sugar, vegetable oil, and egg in a large bowl.
  2. Add the rest of the ingredients alternately with the 1 cup of zucchini. Stir well.
  3. Bake in a bread pan lined with parchment paper at 350F for about 50 minutes, or until a toothpick inserted into the center comes out dry. Let cool before removing from the pan.
